Chicken!

We are now home from vacation and we're ready to embark on a new journey! Without too much being said, we are entering a time of life in which we need to start minding our financial "Ps and Qs" even more.

I am quickly finding just how much growing boys can eat. With a husband, three growing boys and God-willing more in the future, I really need to learn how to stretch our food budget all the while trying to obtain good nourishment!

This week I am going to issue a challenge for myself. I have a family pack of split chicken breasts that has been in the freezer for a while. I am going to challenge myself to make as many nutritious meals out of that chicken as possible.


Now I know that some would say, "Cook it and refreeze it so you won't get burnt out on chicken." but I'm not one of those types. If it goes in the deep freeze, it stays until we clean it out. As hard as I try, I just cannot keep up with what I have in that big ol' thing.

Enter...

Operation 5 1/4 lbs. Chicken Breast Challenge

I used to just bake the chicken with some seasonings and call it dinner, however I need to learn how to stretch it further and bring more vegetables onto our plates.

I will begin the challenge Sunday night. I will be putting chicken into a slow cooker with vegetables and allow the chicken to slow cook - I will be saving the vegetables to make bone broth.

Monday: 2 cups chopped chicken - no broth
Chicken Enchiladas  - with re fried beans and salsa

Tuesday: 4 cups chopped chicken - 4 cups of broth or broth from cooking chicken
White Chicken Chili - with salad and bread (This while make enough for several lunches and LOs)

Wednesday: 1/2 cup chopped chicken - no broth
Chicken Alfredo - with salad

*I will be making the chicken stock out of the bones and vegetables for other meals*

Thursday: 2 cups chopped chicken - 4 cups of chicken stock
Chicken Gnocchi sou- with garlic bread and salad

Friday: 1 cup of chopped chicken - no stock
BBQ Chicken Pizza - fruit and veggie tray

Saturday: 1 cup of chopped chicken - no stock
Chicken Quesadillas - with Spanish rice and chips and salsa

Sunday: 2 quarts chicken stock
CP Baked Potato Soup - with sandwiches

Monday: 1 cup shredded chicken and remaining chicken stock
Chicken and Noodles  - with green beans and mashed potatoes

Tuesday: 1 cup of shredded chicken
Buffalo Chicken Dip - with tortillas, chips and salsa

As I look through these meals, it's really going to be a stretch to get all these meals out of 5.36 lbs of chicken but we're going to give it a whirl! :) If I get all of these meals out of that chicken, I will be stretching one chicken into NINE meals!

MPM: #3 and An Outlook for the Week

This is the last week before school starts for Dylan. I am hoping this is a week where I can get a lot done and good "end of the summer" memories can be made. Here is the menu plan and a "wish list" of things to get done around the humble abode. I am only going to be listing what we will be having for dinner because when I try to get a lot accomplished, I tend to just grab and throw together. I don't think that "grab and throw together" on a menu plan really helps... :)


Monday:
Sloppy Joes, oven fries, green beans

Tuesday:
Chicken quesadillas, chips, salsa

Wednesday:
Pizza

Thursday:
Slow cooker cream cheese chicken, noodles, broccoli

Friday:
Reruns

Potato soup and sandwiches

So as I said above, this is a week that I really want to get things together. I feel like the beginning of a school year is the beginning of the year, not January 1st. I don't know why, the school year just brings I new schedule, slate and routine. Just call me crazy...

We have worked really hard around here and have gotten our house cleaned out, taken the clutter to Goodwill and now we just need to maintain. Maintain... That would be the issue. I am not a good maintainer.. So this week around my home is dedicated to maintaining and getting things back in order around here.

Shouldn't be too hard... Just. Need. To. Find. The. Energy... That is the difficult issue....

MPM: #1



I kind of feel like this is a brand new start to my blog. I feel as if I've been gone so long, we should re-introduce! Goodness...

This pregnancy is really got me exhausted. My heart goes to those who have multiple young children during pregnancies. This time around, I have not been able to cook or eat. Any time I see raw meat, I start barfing. It's ugly, yucky, horrible... So here is my menu plan in hopes that it helps me husband know what he's coming home to make! :) Love you, hunny!!

Italian sausage in marinara sauce, pasta

Monday:
baked oatmeal
grilled shrimp, baked potatoes, corn on the cob

Tuesday:
cinnamon toast
roast, potatoes, carrots and gravy

Menu Plan: Jan 31


How was everyone's weekend?  We had a really good and productive weekend.. And a milestone was reached in our home-- I tried Salmon and actually liked it! Is it bad that it was breaded and fried?! Oh, nevermind that!

I am going to try and incorporate regular breakfasts and lunches into my menu plan. I find that it is hard to begin with but during the weekend, it makes things run so much smoother!

Sunday:
cereal (I have decided to allow our family to eat KIX. Dylan was about to have a break-down when he found out there was no cereal in the house.)

Menu Plan: Jan. 24



I know that my menu plan posts are pretty boring but they are important. Menu plans are important to me because they not only hold me accountable but they also keep my husband informed. He loves being able to just jump on my website during the day, while he's at work, and check to see what we are going to be eating for dinner.

So now I ask you... Why are menu plans online important to you and your family? Do they hold you accountable?

I am only going to be putting breakfasts and dinners, lunches are pretty up in the air due to left overs and being on the run a lot.

Menu plan: January 17- 23



This weekend we got a lot of baking and cooking done and even a little cleaning! This past Friday, I decided to finally make the dive into whole foods and not look back. My good friend Courtney wrote two GREAT posts about first taking the plunge and not looking back and second about their progress.

Well Friday our family took the plunge. Now I would not be telling the truth if I told you it was totally easy. If fact quite the opposite was true. As I threw all my really bad HFCS (high fructose corn syrup) away, I was dreading the fact that I might never have chocolate milk again. But we perservered and we really ate some healthy and yummy  foods. I was pleasantly surprised at how many steps I had already taken not knowing about Traditional Foods. As I was making my menu plan for this week, I was starting to get excited - We are going to be eating healthy and YUMMY foods!

Sunday:

soup and sandwiches
spaghetti with garlic bread

Monday:
applesauce bread
tacos, rice, beans, and salsa

Kefir Smoothies, fruit

Menu Plan: Jan. 10- Jan. 16

Remember the post where I talked about Paradise? Well right now, this is my snowy Paradise in Ohio. I love the snow especially when I don't need to go anywhere!



I would love to be adding more soups and stews to my menu this week, but with trying to using everything up in the Eat From Your Pantry Challenge, it's just not going to be possible. Sigh... I just love a good soup in the cold winter time. With using food up out of my pantry and refridgerator, I have planned out breakfast, lunch and dinner. I don't do this very often but I need a plan of attack to beat the evil Mr. Waste.

Menu Plan: 1st of the 2010


So this is the first menu plan of the New Year!


It feels great, doesn't it?! Is one of your goals this year to cook more at home or to menu plan? I know that is one of mine! I hope that '10 brings you a year of health, happiness, and of course yummy food! Anyway, here is my menu plan for the first full week of January 2010!




Breakfasts: applesauce bread, blueberry muffins, baked oatmeal


Lunches: sandwiches, creamy homemade mac and cheese, chicken tenders, leftovers

Sunday: leftover white chicken chili (recipe coming next Tuesday!)


Monday: pizza, carrot sticks

Menu Plan - Bringing in the New Year!

We had such a hectic and wonderful Christmas... We started Christmas events on Saturday, December 19th and went through Sunday, December 27th. We are tired... And as much as we enjoyed our Christmas Holiday, I think I will be fine if I do not leave the house for the month of January.... So here is our menu plan for the last week of December and first of January:

This weekend we finally got our home all together for the Holidays. We are going to start baking this week!

We are also beginning the crazy, hectic schedule of Holiday celebrations. We now have something everyday from now until next Sunday.

Here is our menu for this crazy week:

Monday: I am going to be going to dinner with a girlfriend. The boys will be eating hotdogs.

Tuesday: Spaghetti

Wednesday: We are going to be having dinner with my parents.

Thursday: Christmas Eve with my family

Friday: Christmas Day with Andy's family

Saturday: My sister-in-laws birthday

Menu Plan and Making Your Home Sing

I have got to be completely honest with y'all... I have been slacking horribly in the homemaking department!

I get completely overwhelmed when the Holidays begin and I just stop functioning... This week I am making a menu plan and I am sticking to it!

My home is going to be singing praises of home-cooked, healthy, around the table meals. It's amazing to me how excited I am getting about cooking! Just thinking about this menu plan is making me giddy!

So here is a quick run down of what we will be eating and what fun Christmas and daily activities are going on around our home!

I just love the Holiday season but this week, I am working on getting my home in top cleaning and running order! I want to be able to enjoy the Holidays without worrying about my home. I am getting back to my morning quiet time, as well as eating at home!

Menu Plan: November 16


We had a really relxing weekend. With all the issues at Andy's work (I will be posting about that later this week), I wanted to have a weekend that was stress and carefree. We spent time together as a family as well as time with other family and friends.

*A quick yummy snack recipe for you!*
Mama's Yummy Trail Mix
3/4 c. raw sunflower seeds
1/2 c. sliced almonds
1/4 c. raisins
1/4 c. cranraisins
1/8 c. pitted pruns
1/8 c. pitted plums
1/3 c. coconut
Combine all ingredients and shake. Serve.

Menu Plan: November 9

I hope y'all had a blessed weekend. We had a relaxing weekend and got some much needed work done around the house. This week appears to be a relatively calm week (Scary... When it starts to look like that something always happens!).

A side note: I went to our local Natural food store this week and requested information on kefir grains and vegetable rennet... I was blown away. I thought a lot of women were becoming informed and interested in nutrition and whole foods, but apparently around where I live, that is NOT the case. I quote the lady at the store "Honey, you're the only one that comes in here looking for all this stuff. I think you might be the only one into all this health nonsense." Oh my is all I could think. Therefore I am making it a mission of mine to share more of my whole foods experience, hoping those around my home read my blog and will want to join me.

Also, I am preceeding with No Spend November. There will not be as many posts this week due to the fact that last week exhausted me. If you are looking for a No Spend Post everyday this week, it won't be there. However, I will be discussing in a few posts this week about how I save money decorating my home.


Here's our menu plan for the week:

Menu Plan Monday: Nov.1st


This week Andy is going to be working late, therefore meals will be moved around when he comes home.
I am really excited because this week marks the beginning of my No Spend November!
Our weekend was fun and full of all kind of crazy running around to show off my little Star Wars heroes! Sometimes I think it would be so much easier not to have to go 10,000 places on Holidays but then I remember just how much fun the boys had and how they brought smiles to people's faces.
Sunday: Taco Nachos, Chips, Salsa
Monday: Cubed Steak, Mashed Potatoes, Broccoli
Tuesday: Breakfast Burrito Casserole
Wednesday: Pizza night

For the L.O.V.E. of Lists


I LOVE lists. I love checking things off of lists. I love the feeling of accomplishment that comes from lists.

I find that organizational tools such as lists, goals written down, menu plans, and calendars are my friend, BUT they are only my friend if I use them correctly.

There are a lot of "Life Binder" ideas out there, but those ideas just do not work for me. I am organized in my own sort of way and I become overwhelmed when I have a huge binder with a lot of different sections.

Therefore, I decided to show and tell you some ways that I stay organized and stay sane. People often ask me how I stay on top of things with this being my first year of homeschooling. I will give a little peek here today.

First and foremost, I use this blog as a reminder. I use it to write my lists for the week, I use it to keep my thoughts organized and I use it to stay on top of Menu Planning.
Lots, of people use printed out menu plans, but with all the paper that comes and goes through this house, it just isn't possible to keep a tab on where it is (I tried putting it on the refrigerator and the boys would jump and rip it off. I have tried multiple things, just none have worked for me.). Therefore, putting my menu up on here and just jumping on in the morning to see what is planned for dinner works for me. My husband also likes that he can just jump online to look at what we're having for dinner. It makes the Davis' home go smoother!

Another tool my husband and some of my friends use, but I have not gotten into (I'm not too good at technological things! :)) is Google Calendars. My husband uses it and it keeps him on top of things so it must be a good tool! To learn more about it click here.






The next tool I use it the "chore chart". It isn't necessarily a chore chart for any one person in the family, it is just a chart that states what we should do every day during the day. We try and do a quick clean and do of everyone of the things on the list but the day that we focus on a certain area has a box. Some categories have a box every day, these are things that we need to do every day such as make our bed, brush our teeth, and dinner/clean up. This helps are day go much more smoothly.


I also LOVE my planner. Every year when the school year starts, I buy a new planner. For our home the new year begins with each school year, more than with each calendar year. You cannot see it in this picture but every night before I go to bed, I tentatively schedule every hour of my day. Now days that I follow the schedule to a T, I would be telling a fib if I said I did not feel better, BUT I always try to be open to God's gentle interruptions (I am NO where close to being good at it yet!). I just feel when I follow this schedule somewhat there is not a lot of wasted time. I am distracted very easy but one thing that helps is I'm not a big "phone talker". If you catch me on a good day I am, but it is just too hard to focus on a conversation when boys are circling you with guns, screaming "you're next mom". This also limits me computer time. I love to jump on and read blogs, but there just isn't enough time for it some days. I try to use my schedule as a reward for myself. I find that if I do things in a timely manner and correctly, I let myself jump on the computer the remaining time. When the next hour starts, I start too. This is just a little trick that works for me.

The final tool I use is my family wall calendar. This isn't a very exciting tool. We have a wall calendar hanging in the kitchen so if someone calls and wants to schedule something we can take a quick look at whether we already have something planned for that time. Now we have the rule in our home (and we try to adhere to it!) that before we schedule or commit to something, we always talk to each other. It doesn't always work, but we have found time and time again that one of us had an idea for a Saturday and the other had a totally different idea or committed the family to something else. This calendar is very handy during the Holiday season. We both have large families that live near us. Therefore, we have a TON of plans. I am starting to have anxiety attacks just thinking of the events coming up.


These organizational tools really work for me especially when times get hectic around our home. I hope that they can be of use to you during your busy holiday season!

Menu Plan #23

I had such a relaxing and enjoyable weekend! First the church Women's Retreat that was oh so much needed, then my birthday dinner at my mother-in-law's Sunday afternoon, an afternoon nap, and then I great small group!

So we had a great weekend around here- relaxed, got a few things done around the house, watched Ohio State Football, celebrated my grandma's birthday, and put up my fall decorations!


Have a happened to tell you that I L.O.V.E. Ohio State Football? I love living in a football loving state and city. It's the greatest thing ever!


So here is our family menu for the week. We didn't get everything from last week so this week we are going to do some repeats!

Monday: Grilled Cheese, Homemade Veggie Soup (see recipe below)


Tuesday: Chicken Enchiladas, Chips and Salsa


Wednesday: Pizza Night! (Last week, I had many requests for my BBQ Chicken Pizza. I will reveal it later this week... We watching for it!! :) )


Thursday: Sloppy Joes, oven friends, fruit


Friday: I'm going to be at a Women's Retreat so Andy and the boys will be eating Tacos


Saturday: Women's Retreat


Sunday: Hot dogs, relish, chips, carrot sticks

Vegetable Soup: Makes 25 Servings


3 3/4 quarts of chicken or beef stock

3 quarts tomatoes

1 1/4 cup celery, diced

1 1/2 cup onion, diced

1/2 teaspoon black pepper

2 Tbsp. parsley

1 Tbsp. garlic powder


-- Combine all the above, bring to a boil, and let simmer for 20 minutes--


1 1/2 cup frozen corn

2 cup carrots

1 1/3 cup green beans

2 cup peas


--Cover and simmer until tender.-- I put mine in a big stock pot or crock pot and let it sit and simmer on low all day long, doing that helps all the flavors blend together and the veggies to become oh so tender!

  • Monday- Chicken Noodle Soup and Grilled Cheese Sandwiches
  • Tuesday- Salmon Patties, Oven fries, carrot sticks
  • Wednesday- BBQ Chicken Pizza, Salad greens
  • Thursday- Sloppy Joes, Chips, fruit
  • Friday- Chicken Sandwiches, corn, green beans
  • Saturday- Breakfast for dinner (sausage, waffles, eggs)
  • Sunday- Chicken Enchiladas, chips and salsa
